New York Weddings Winter 2014 Cake Feature

For the 2014 Winter issue of New York Weddings magazine we created a cake that had a distinct yet very familiar texture.  Can you guess where you've seen this cracked pattern?

When trying to come up with the ideas for this cake I happened to be at Home Depot.  I was looking through some ceiling light covers and thought...why not use the textured cover as a fondant embosser?!  Add some piped swags and here's how it turned out.

Summer means graduation parties.  Here's a grad cake we made last week for a young lady headed to Barnard in NYC!  Best wishes to all 2013 grads!

This tier was designed to resemble the decorative gates at the entrance of the Barnard campus. 

The classic graduation cap and diploma topped off the cake.

Title: Sculpted Flower Pot Cake
Level: Beginner/Intermediate
When: Saturday, May 11th from 12-4pm
Location: 176 S. Van Brunt Street Englewood, NJ 07631

Description:
- Learn how to fill, frost and sculpt cake into the shape of a clay flower pot
- Color and cover cake with fondant
- Create dirt out of cake
- Make edible gumpaste flowers (ie. hydrangea, daisy, sunflower, sugar blossom, dogwood and leaves)
- Bring sugar flowers to life by adding colorful shades, shadows and dimension with edible dusts.

Price:
The Flower Pot Cake class is $145 per person. This price includes cake, buttercream and the use of all tools and materials. Students must be 12 years or older. Full payment is required at the time of registration to secure your spot. Space is limited so sign up now!  Registration ends Sat. May 4th. 

What to bring and wear:
You are not required to bring anything to the class; however you can bring a notebook and camera if you wish. We ask that you wear casual clothing and flat, closed toe shoes. Also, please have your hair tied back if possible.

Cancellation policy and late arrivals:

In that case, we will contact you and issue a full refund.

Rainbow (rice) cake

Rainbow rice cake is a special Korean dessert that you would find at celebrations such as a baby's first birthday.  It is made with rice flour, water, sugar and coloring.  Each colored component is layered on top of each other and then steamed.  The result is slightly sweet and beautifully chewy.  It is one of my all time favorite Korean desserts. 

Anyways, Esther Mun of Lil' Cake Toppers (you must check out her site for AMAZING hand painted wooden toppers!!!!) approached me with a funny idea to make an American sponge cake that would mimic the look of a Korean rice cake for her nephew's 1st birthday.  Genius mind trick.  Apparently the mom's at the party fell for it and thought it was a rice cake.....until they ate it and realized it was vanilla cake!  Here's how it turned out....

When: Saturday, April 20, 2013 from 12-5pm  (*Registration deadline is April 12, 2013)

Description:
- Learn how to layer, fill and frost square cakes
- Color and cover cakes with fondant
- Properly dowel and stack a 2 tier cake
- Create gumpaste decorations including stripes, bows and customized banners (Happy Birthday, Baby Shower, Just Married, Congrats, etc)

Cost:
The 2-Tier Celebration Banner Cake class is $295 per person. This price includes instruction, cake, buttercream and the use of all tools and materials. Students must be 16 years or older. Full payment is required at the time of registration to confirm your spot. Space is limited to the first 5 students.

What to bring and wear:
You are not required to bring anything to the class; however you can bring a notebook and camera if you wish. We ask that you wear casual clothing and flat, closed toe shoes. Also, please have your hair tied back if possible.

This past weekend I collaborated with the New York Botanical Garden and MasterCard Priceless New York Budding Master's program to teach a workshop on gingerbread houses.  It was an awesome time!  There were 4 kids who really used their creativity and artistry to build beautiful houses.  Not only that, but the staff from the NYBG brought it back to plants by teaching them about sources of the ingredients such as wheat, cinnamon, cloves, ginger and sugar.
